Crockpot Chicken Stew

Makes 4 servings

 

2 cups low sodium chicken broth

2 cups water

½ pound skinless chicken breast, cooked, shredded

½ pound skinless chicken thighs, cooked, shredded

1/2 pound frozen carrots

1/2 pound frozen green beans

1/2 small onion, diced

1 cup mashed potato flakes

1/2 teaspoon poultry seasoning

 

Spray your crock pot with nonstick cooking spray.  Shred the cooked chicken into bite size pieces and add them to the crock pot.  Then add the carrots and green beans and diced onion.  Add the seasonings, chicken broth and water.  Stir to combine and cover.

 

Turn your crock pot to low and set for 6 hours.  Then stir in the potato flakes.  Best served immediately.

 

Nutrition Information per Serving: Calories 211; Total Fat 3 grams; Saturated Fat 1 gram; Protein 25 grams; Total Carbohydrate 21 grams; Dietary Fiber 5 grams; Sodium 353 milligrams.
