Take your tastebuds on a trip to the Caribbean with this flavorful dish from the grill.

 

Caribbean Glazed Shrimp

 

For the marinade:

8 bamboo skewers

¼ teaspoon freshly ground black pepper

1/8 teaspoon kosher salt

1 clove garlic, minced

1 tablespoon canola oil

1 tablespoon lemon juice

24 large shrimp

 

For the glaze:

¼ teaspoon kosher salt

¼ teaspoon cinnamon

¼ teaspoon freshly ground black pepper

¼ cup brown sugar

¼ cup rum

¼ cup honey

3 tablespoons Dijon mustard

1 tablespoon vinegar

1 tablespoon butter

 

1.       Soak skewers in water.

2.       Coat grill rack with nonstick cooking spray.

3.       Heat grill to medium heat.

4.       Combine first five ingredients in a large bowl.  Add shrimp and toss to coat.

5.       Let shrimp marinade and chill for at least 15 minutes.

6.       Thread 3 shrimp onto each skewer.

7.       Combine glaze ingredients in a small saucepan and bring to a boil over high heat.  Decrease heat to low and simmer glaze until it becomes somewhat thick.

8.       Grill skewers for 3 minutes on each side or until pink and no longer translucent while basting with glaze.
